generously drizzled with blackberry cassis gastrique….believe us when we say this tasted as good as it sounds.

Last Thursday Jenny and I were lucky enough to be invited to the annual Silver Grill Steak and Chop House pre-season tasting in one of our favourite venues on the mountain.

It was a great opportunity for us to meet with our brand new head Chef Brenden Blair. With Brenden’s 12yrs of cooking experience, schooling in Strasburg, France and having worked at Cedar Creek Estate Winery, and more recently Summerhill Organic Winery, we believe he will prove an excellent addition to our team.
Brenden certainly didn’t disappoint and wooed us all with his delectable treats. We tasted an array of delicious starters including, warm hazelnut encrusted Chevre with a beautiful tomato red pepper chutney; the largest, moist Dungeness Crab cake we’ve ever seen, encased in a Panko dill crust served with a golden saffron aioli. Jenny’s personal favorite was the house smoked candied salmon Bellini – This is where the winery influence really shone through, Brenden smokes his salmon using the wood from ice wine barrels and it really comes through in the flavor! The starter I’ll be ordering again without fail is the Alcasian onion and boar’s bacon tarte, perfect pastry, sweet caramelized onions and meaty boar lardons were a heavenly combination.

The main courses were just as amazing and I must just add the colors on the plates as these dishes were presented to us just jumped out an almost bit us. With a choice of beef, lamb, Sockeye Salmon, Seared Halibut, Chicken Supreme and the out of this world Truffled mushroom Pappardelle – there is something to please every palate.

Allie Sadler our beautiful and talented pastry chef returns to us this winter. Not only has Allie come up with a fabulous new dessert menu for the Silver Grill but she also extends her talents to the Den Bistro and Bar produces delicious sweet treats for them too!
